Instructions

  1. Peel and grate potatoes.
  2. Add potatoes to water to remove starch. Stir and Remove to paper towels.
  3. Add olive oil to pan and bring up to temp where it just starts to wisp smoke.
  4. Add a layer of grated potatoes spread out over pan. Cook till golden brown and then flip. Cook other side to golden brown.
  5. Remove to paper towel lined plate and season with salt and pepper.
