- 1 Ea Russet Potato
- 1 Tablespoon Olive Oil

Instructions
- Peel and grate potatoes.
- Add potatoes to water to remove starch. Stir and Remove to paper towels.
- Add olive oil to pan and bring up to temp where it just starts to wisp smoke.
- Add a layer of grated potatoes spread out over pan. Cook till golden brown and then flip. Cook other side to golden brown.
- Remove to paper towel lined plate and season with salt and pepper.
