Ingredients
- 1 Tbsp Olive Oil (or Avocado Oil)
- 2 tsp Fresh Ginger (Or 1 tsp dried)
- 1 tsp Red Chili Flakes (Add More or Less depending on level of spice desired)
- 1 tsp Ground Coriander
- 1/2 tsp Cumin
- 1/4 tsp Tumeric
- 1/4 tsp Cardamom
- 1/4 tsp Ground Cloves
- 1/4 tsp Ground Cinnamon
- 1/4 tsp Salt
- 5 Cups Mango, Fresh or Frozen
- 2 Cups White Sugar
- 1 Cup Vinegar
Instructions
- Saute ginger, garlic and red pepper flakes for about a minute.
- Add the rest of the spices and saute for about another minute.
- Add Remaining Ingredients. Then bring to a boil and simmer till mango's easily shred with fork. I'll go through and lightly shread the mangos. Sometimes I'll cook a little less for larger chunks, depends on taste.
- Let cool and portion into freezer bags for later use.
