  1. Started boiling water in sauce pan filled about 3/4 full. Add vinegar and bring to light boil.
  2. Make hollandaise.
  3. Fry prosciutto over medium low and to point its semi crispy and has got color on both sides. Like bacon.
  4. Poach egg by creating vortex in water w a spoon. Crack egg into center of vortex. Crack second egg into center of vortex. Usually vortex is mostly slowed down by time I get to second egg, but that's ok. Don't try to get the vortex going again. Remove eggs when white is opaque and place on paper towel to drain excess water.
  5. Toast English muffin halves.
  6. Assemble. English muffins half. Prosciutto slice folded over. Poached egg. Hollandaise sauce.
  7. Enjoy
