La Salsiccia alla Cipolla (Sausage and Onions)

  1. Begin cooking sausage with a small amount of olive oil. When cooking the sausage, it works best to form a circle in the pan with the sausage using skewers to hold the shape. Brown the sausage and remove from pan.
  2. Add the sliced onions and turn heat to low. Cook until the onion has turned a nice brown color. Cut small holes in the sausage to allow the fat to exit and mix with the onions.
  3. After Onions have cooked, add wine and sausage back to the pan and cook for another 10 minutes on low or until wine has mostly evaporated.
