Ingredients
- 8 Ea Roma Tomatoes
- 1/3 Ea Large Yellow, White or Red Onion
- 1 Ea Lime Juice
- 1 Ea Jalapeno (1 cleaned for a little flavor and no heat - 2 with seeds for mild heat)
- 1/3 Cup Cilantro
- 2 Cloves Garlic
- 1 tsp Granulated Sugar
- 1 tsp Salt
- 1 Pinch Oregano
- 1 Pinch Cumin
Instructions
- Seed the jalapeno, then run jalapeno, tomatoes, and onions over a Mandolin set to about 1/8in to get thin slices and then rough chop and throw in food processor. I do not include stems.
- Slice Cilantro into ribbons and add to food processor
- Crush Garlic into food processor
- Add the rest of the ingredients to the food processor and pulse several times to get desired consistency. Should all be small chunks- not liquified.
